Skyler Mapes is the cofounder of EXAU Olive Oil, a luxury Italian brand she founded with her husband, Giuseppe Morisani, in 2017. Together, they harvest fruit from century-old trees in Calabria, Italy, building a successful direct-to-consumer brand in the US and Canada. Skyler is a level II olive oil sommelier, olive tree technician, and co-author of The Olive Oil Enthusiast. She’s pursuing a master’s in olive cultivation and expanding EXAU into travel advising. Outside of work, Skyler enjoys exploring Calabria with Giuseppe, traveling the region from coast to coast both by sea and mountain.
